Thaise noodle gerechten

Noodles zijn samen met rijst één van de belangrijkste gerechten in Thailand. Thaise noodles worden meestal van rijst gemaakt, soms aangevuld met tapiocameel. Een bijzondere Thaise noodle soort is konom tjien, die gemaakt wordt van rijst die eerst gefermenteerd is. Thaise rijstnoodles kunnen breed zijn (rice sticks) of erg dun (mihoen).

Noodles worden in Thailand niet alleen als basis voor de heerlijke curry’s uit deze keuken gebruikt. Ze worden ook in soepen en salades gedaan. Doe hier inspiratie op voor je volgende Thaise gerecht met deze klassieke noodle recepten!

Pad Thai

Pad Thai is wel één van de meest bekende noodle gerechten ter wereld. En dat is bijzonder, want het gerecht bestaat eigenlijk pas sinds de Tweede Wereldoorlog. Dat mag de pret niet drukken: Pad Thai is heerlijk streetfood en wordt bij bijna alle Thaise restaurants in Nederland opgediend. Thuis kun je heel veel verschillende varianten van Pad Thai maken, maar onderstaand recept is het meest gebruikelijke.

Knoflook, vlees, tofu of garnalen en verse pepers worden kort gewokt. Daaraan wordt bosui of Chinese bieslook toegevoegd. Gare noodles en eieren worden door het gerecht heen geroerd, waarna het wordt afgemaakt met een saus van suiker, limoen, vissaus en tamarinde. Serveer de Pad Thai met limoenschijfjes, verse koriander en gehakte pinda’s.

Kuai Tiao Ruea

Deze hartige soep werd van oorsprong geserveerd vanaf boten op de grachten van Bangkok, de Thaise hoofdstad. De soep is op basis van rundvleesbouillon, bevat gehaktballen, orgaanvlees en soms zelfs bloed, en wordt gegarneerd met bladgroenten en taugé. Hierin drijven smakelijke, dunne rijst- of tarwe noodles.

Pad Kee Mao

Dit zijn de beroemde “dronken noedels” die vaak later op de avond vanuit kraampjes worden verkocht aan feestgangers. Hiervoor worden brede, platte ‘rice stick’ noodles gebruikt, die op smaak gebracht zijn met sojasaus, vissaus en oestersaus. Andere ingrediënten zijn ei, chili, knoflook en vlees. De saus van Pad Kee Mao is dik, zoet en plakkerig, waardoor het gerecht een goede remedie heet te zijn om een kater de volgende dag te voorkomen.

Pad Kra Pow

Minder bekend in het westen, maar één van de meest populaire recepten in Thailand zelf. Het geheim van dit ontzettend smakelijke gerecht is Thaise basilicum, dat een krachtige, kruidige smaak heeft die wat aan munt doet denken. Gefruite knoflook en chilipepers worden gecombineerd met vissaus en palmsuiker. Daaraan wordt vlees of tofoe toegevoegd, en het geheel wordt geserveerd over tarwe noodles.

Laksa

Deze soep wordt door heel Zuidoost-Azië met veel enthousiasme gegeten. Het is een milde, zeer aromatische currysoep vol verse groenten, kruiden en natuurlijk noodles. Daaraan kan je eventueel kip of zeevoedsel toevoegen, maar nodig is het niet – de soep zelf is namelijk zalig. De pasta voor Laksa wordt door de meeste huisvrouwen en restaurants zelf vers gemaakt. Kant-en-klare pasta’s voor Laksa die we hier in de toko vinden vallen helaas soms tegen – proef hem daarom bij een restaurant.
